Recipe for a quick spinach sautéed with garlic and lemon
Ingredients:
1 pound of fresh spinach, washed and trimmed 2 tablespoons of olive oil 3 cloves of garlic, minced 1/4 teaspoon of red pepper flakes (optional) 1 tablespoon of freshly squeezed lemon juice Salt and pepper to taste
Instructions:
Heat the olive oil in a large skillet over medium heat.
Add the minced garlic and red pepper flakes (if using) to the skillet and sauté for about 1 minute, or until the garlic is fragrant.
Add the spinach to the skillet, and toss with the garlic and oil until the spinach is wilted, about 2-3 minutes.
Remove the skillet from the heat, and drizzle the lemon juice over the spinach. Season the spinach with salt and pepper to taste.
Serve the spinach hot as a side dish, or use it as a base for a nutritious salad.
