1 cup fresh fenugreek leaves (methi), chopped 1 cup green peas (matar), fresh or frozen 1/2 cup heavy cream 1/2 cup milk 2 tablespoons ghee or butter 1 teaspoon cumin seeds 1 teaspoon ginger paste 1 teaspoon garlic paste 1/2 teaspoon turmeric powder 1/2 teaspoon red chili powder 1/2 teaspoon garam masala Salt to taste 1 tablespoon chopped cashews (optional)
Instructions:
Heat ghee or butter in a pan over medium heat.
Add cumin seeds and let them splutter.
Add ginger and garlic paste and sauté for a minute.
Add chopped fenugreek leaves and sauté for 3-4 minutes or until the leaves wilt.
Add green peas and sauté for 2-3 minutes.
Add turmeric powder, red chili powder, garam masala, and salt. Mix well.
Add milk and bring the mixture to a boil.
Reduce heat and let it simmer for 5-6 minutes.
Add heavy cream and mix well.
Let it simmer for another 2-3 minutes.
Garnish with chopped cashews (optional) and serve hot with rice or naan.
Note: You can adjust the amount of spices and cream according to your taste. Also, you can use dried fenugreek leaves (kasuri methi) instead of fresh ones, but reduce the quantity to 1/4 cup as they have a stronger flavour.
