Cilantro Lime Rice


1 cup white rice
1 3/4 cups water
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper


  1. Rinse the rice in a fine-mesh strainer and transfer to a medium pot.
  2. Add water and bring to a boil.
  3. Reduce heat to low, cover, and simmer until the rice is cooked and the water is absorbed, about 18-20 minutes.
  4. Remove from heat and let the rice rest for 5 minutes.
  5. Fluff the rice with a fork and stir in cilantro, lime juice, salt, and black pepper.
  6. Serve immediately and enjoy!

Note: You can also use this recipe as a base and add other ingredients like diced tomatoes, black beans, or corn to make it more flavourful and colourful.
