Here’s a recipe for a Caesar Salad with cherry tomatoes, Lolo Rosso lettuce, iceberg lettuce, olives, and garlic croutons, using a low-fat Caesar dressing:

Ingredients
For the salad:

1 head of iceberg lettuce, chopped
1 head of Lolo Rosso lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup pitted olives, sliced
1 cup garlic croutons

Ingredients
For the dressing:

1/4 cup low-fat mayonnaise
1/4 cup low-fat Greek yogurt
2 tablespoons fresh lemon juice
2 tablespoons grated Parmesan cheese
2 cloves garlic, minced
1/4 teaspoon Dijon mustard
Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the chopped iceberg lettuce, Lolo Rosso lettuce, cherry tomatoes, and sliced olives.
