Caesar Salad

Here’s a recipe for a Caesar Salad with cherry tomatoes, Lolo Rosso lettuce, iceberg lettuce, olives, and garlic croutons, using a low-fat Caesar dressing:

For the salad:

1 head of iceberg lettuce, chopped
1 head of Lolo Rosso lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup pitted olives, sliced
1 cup garlic croutons

For the dressing:

1/4 cup low-fat mayonnaise
1/4 cup low-fat Greek yogurt
2 tablespoons fresh lemon juice
2 tablespoons grated Parmesan cheese
2 cloves garlic, minced
1/4 teaspoon Dijon mustard
Salt and pepper to taste


  1. In a large bowl, combine the chopped iceberg lettuce, Lolo Rosso lettuce, cherry tomatoes, and sliced olives.
  2. To make the dressing, whisk together the mayonnaise, Greek yogurt, lemon juice, Parmesan cheese, garlic, Dijon mustard, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad and toss to combine.
  4. Top the salad with garlic croutons and serve immediately.
