Ingredients:

1/2 cup yellow mustard seeds
1/2 cup brown mustard seeds
1 cup white wine vinegar
1/2 cup water
2 tablespoons honey
1 teaspoon salt
1/2 teaspoon turmeric

Instructions:

  1. In a large bowl, combine the yellow and brown mustard seeds.
  2. In a separate small saucepan, heat the white wine vinegar, water, honey, salt, and turmeric until it comes to a simmer.
  3. Pour the hot vinegar mixture over the mustard seeds, and stir to combine.
  4. Let the mixture sit at room temperature for at least 24 hours, stirring occasionally.
  5. Once the mustard seeds have absorbed most of the liquid and softened, blend the mixture in a blender or food processor until it reaches the desired consistency.
  6. Transfer the mustard to a jar or other airtight container, and refrigerate until ready to use.
