Lemon basil is a fragrant herb that adds a unique citrusy and slightly sweet flavour to dishes. Here’s a simple recipe for lemon basil pesto that you can use as a spread, dip, or sauce for pasta, sandwiches, or salads:

Ingredients

2 cups fresh lemon basil leaves
1/2 cup pine nuts or walnuts
1/2 cup grated Parmesan cheese
2 garlic cloves
1/2 cup extra-virgin olive oil
Juice and zest of 1 lemon
Salt and freshly ground black pepper, to taste

Instructions:

  1. In a food processor, pulse the lemon basil leaves, pine nuts, Parmesan cheese, garlic, lemon juice, and zest until finely chopped.
  2. With the food processor running, slowly pour in the olive oil and process until the mixture is smooth and creamy.
  3. Season with salt and freshly ground black pepper to taste.
  4. Store the pesto in an airtight container in the refrigerator for up to 1 week.
