Swiss Chard Dish

Recipe for a tasty and healthy Swiss chard dish.

Ingredients:

1 bunch of Swiss chard, leaves and stems separated
2 tbsp olive oil
1 onion, chopped
3 cloves of garlic, minced
1 tsp ground cumin
1/4 tsp red pepper flakes (optional)
Salt and black pepper to taste
1 can of diced tomatoes, drained
1/4 cup of vegetable broth
1 can of chickpeas, drained and rinsed
1 tbsp lemon juice

Instructions:

  1. Rinse the Swiss chard leaves and stems separately in cold water and pat them dry.
  2. Cut the stems into 1-inch pieces and chop the leaves.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the onion and sauté for 3-4 minutes, until it becomes translucent.
  5. Add the minced garlic, ground cumin, red pepper flakes, salt, and black pepper to the skillet, and stir for another minute.
  6. Add the chopped Swiss chard stems to the skillet, and cook for 5-6 minutes, until they become tender.
  7. Add the diced tomatoes, vegetable broth, and chickpeas to the skillet, and bring the mixture to a simmer.
  8. Cover the skillet and let it cook for 10-15 minutes, stirring occasionally.
  9. Add the chopped Swiss chard leaves and lemon juice to the skillet, and stir until the leaves have wilted and become tender, which should take about 3-4 minutes.
  10. Adjust the seasoning to taste.
  11. Serve the Swiss chard dish hot and enjoy!
