Protein Salad

Recipe for a protein-packed salad that includes chickpeas and paneer, with a tangy honey lemon vinaigrette dressing:

Ingredients for the salad:

1 head of oak leaf lettuce, washed and torn into bite-sized pieces
1 head of green leaf lettuce, washed and torn into bite-sized pieces
1 can of chickpeas, drained and rinsed
8 ounces of paneer, cubed
1 red bell pepper, seeded and chopped
1/4 cup of sliced black olives

Ingredients for the honey lemon vinaigrette:

1/4 cup of lemon juice
1/4 cup of olive oil
1 tablespoon of honey
1 garlic clove, minced
Salt and pepper to taste


  1. In a large bowl, combine the oak leaf lettuce, green leaf lettuce, chickpeas, paneer, red bell pepper, and sliced black olives.
  2. In a small bowl, whisk together the lemon juice, olive oil, honey, minced garlic, and salt and pepper to make the honey lemon vinaigrette.
