Mint and Cucumber Salad

Mint is a versatile herb that can be used in a variety of dishes, from sweet to savoury. Here’s a simple recipe that incorporates fresh mint:


2 cups diced cucumber
1/4 cup diced red onion
1/4 cup chopped fresh mint leaves
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper, to taste


  1. In a large bowl, combine the diced cucumber, red onion, and chopped mint leaves.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  3. Pour the dressing over the cucumber mixture and toss everything together until the salad is evenly coated in dressing.
  4. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
