Mexican Salad

Recipe for the Mexican Salad with Classic Chipotle Dressing:

For the Salad:

4 cups mixed green leaf lettuce and oak leaf lettuce, washed and torn into bite-sized pieces
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup corn kernels, fresh or frozen
1 cup canned baked beans, rinsed and drained
1/2 cup fresh basil leaves, chopped
1/2 cucumber, sliced
1 cup nachos, crushed

For the Dressing:

1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons adobo sauce (from canned chipotles in adobo)
1 tablespoon lime juice
1 teaspoon garlic powder
1/2 teaspoon ground cumin
Salt and pepper to taste


  1. In a large mixing bowl, combine the mixed lettuce, diced bell peppers, corn, baked beans, chopped basil, and sliced cucumber.
  2. To make the dressing, in a separate bowl, whisk together the mayonnaise, sour cream, adobo sauce, lime juice, garlic powder, cumin, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss to combine.
  4. Top with the crushed nachos and serve immediately.
