Arugula Pesto Pasta


Pasta (your choice of shape)
2 cups arugula
1/2 cup grated Parmesan cheese
1/3 cup pine nuts
2 cloves garlic
1/2 cup extra-virgin olive oil
Salt and pepper to taste


  1. Cook the pasta according to the package instructions until soft. Drain and set aside.
  2. In a food processor, combine the arugula, Parmesan cheese, pine nuts, garlic, olive oil, salt, and pepper. Process until smooth.
  3. Toss the pesto with the cooked pasta until evenly coated.
  4. Serve hot and enjoy!

Optional: You can add additional toppings to the pasta, such as cherry tomatoes or sautéed mushrooms, to add more flavour and texture.
