Amaranth Porridge

Amaranth is a versatile and nutritious grain that can be used in a variety of recipes. Here’s a simple recipe for Amaranth porridge:


1 cup amaranth
3 cups water or milk
Pinch of salt
Honey, maple syrup or other sweetener (optional)
Fresh fruit, nuts or other toppings (optional)


  1. Rinse the amaranth in a fine-mesh strainer and remove any debris or stones.
  2. In a medium-sized pot, bring the water or milk to a boil.
  3. Add the amaranth and a pinch of salt, stir and reduce heat to low.
  4. Cover the pot and simmer for 20-25 minutes or until the water has been absorbed and the amaranth is cooked.
  5. Remove the pot from the heat and let it sit covered for 5 minutes.
  6. Fluff the amaranth with a fork and add your desired sweetener and toppings, if using.
